Apple and Rosemary Focaccia

I don't usually plan on making a blog post but when something catches my eye - a chair, a color, a recipe, or in this case, an apple, I'm unstoppable.

I saw this tiny fruit when I was doing errands around the city, specifically the sidewalk. It was such a cutie😍 that i became obsessed with what to do about it.

Those on the left are fuji apples and those on the right are my cuties, sorry I don't know the name of the variety (I forgot to ask the vendor..oops!). But they sure are much tinier than gala apples.

I was inspired to use it for apple tarts or apple hand pies for some time but gave up on the idea since I'm not confident whipping up tarts and pies yet. 😉

So, after a lot of mulling over.....i decided to keep it simple and use it for my focaccia. I love rosemary focaccia! Please use fresh rosemary otherwise...yuck!

Focaccia are flat breads usually shaped like a pizza. But for this recipe, i shaped them into palm-sized miniatures since i wanted the idea of it being hand-held.

The recipe is simple, just use the pizza dough found  here , top it with a generous amount of olive oil, cored and sliced apples (fuji can be used as sub), fresh rosemary and monterey jack cheese (gruyere is much better).

Pair it with a crisp white wine and it's Perrrfecto!

While the bread is getting fired up...why not try that white wine just to check if it's still bubbly... 😉

Yep, that apple is still the cutest thang'.  

Hold it.... don't just devour it (I'm with you, it's just so hard not to). Now, slowly breathe and inhale the aroma of rosemary on fresh bread... ahmazin'! The flowery scent of the rosemary combined with the fruity flavor of the apple is totally out of this world!!!

All you have to do is find a cozy nook in your garden and soak it all in. Go, try it, you'll know what I'm talking about. 😊 

One trick, put some plants under that glass top for some extra wow.
